Pasta comes in many shapes and forms, but there‘s nothing quite as soft as gnocchi. And the star of this pasta variety isn’t flour and eggs, but potatoes! That’s where it gets its softness from.

A bit of trivia to impress your guests when serving the dish:

The word ‚gnocchi‘ comes from the Italian word ’nocchio,‘ which means ‚knot.‘ The smallest version of gnocchi is called ‚gnocchetti.‘ Some people consider gnocchi to be a type of dumpling, while others consider it to be a type of pasta. Gnocchi can also be made with semolina or saffron. Whether or not gnocchi is considered a type of pasta is a matter of debate, but we’ll leave that up to you to decide.

For the sauce:

  1. Melt the butter in a sauce pot.
  2. Add the onions and shallots.
  3. Sauté over medium heat for approximately 5 minutes or until translucent.
  4. Add the flour to the pot to make a roux.
  5. Stir the roux for 3 minutes on low heat.
  6. Slowly whisk the chicken stock into the roux. Add the cream. Bring to a boil then reduce the heat to a simmer.
  7. Simmer the sauce for ½ hour on low heat.

While the sauce is simmering make a Champagne reduction by simmering the Champagne with the minced shallots. When the Champagne has reduced and there is approximately ½ cup liquid left in the pot, add to the simmering sauce. Simmer an additional 10 minutes. Remove the sauce from the heat and strain. Ready to serve or refrigerate.

This delicious dish is now ready to serve. Enjoy! And don’t forget to check out our wine recommendation to pair with your truffle gnocchi.
