To freeze gnocchi dough:

- Roll your dough into balls like pizza dough balls of about 250g for a generous single portion (perfect if you like gnocchi as much as I do…)
- Freeze the separated gnocchi dough balls on a baking tray for a couple of hours
- Transfer to freezer bags and back to the freezer
To freeze cooked gnocchi:

Let the gnocchi cool under cover
- Space the gnocchi out on a baking tray so they are not touching
- Place in a freezer for up to 20 minutes to freeze their surface
- Transfer to freezer bags and freeze the gnocchi

Defrosting gnocchi dough:
- Both frozen gnocchi dough and pre-cooked gnocchi will benefit from thorough but slow thawing
- If possible, remove to a fridge 24h before you plan to use it
- Then go ahead, prepare and devour that delicious delight as close to being completely fresh as you can get
